Prep
  1. Wash the rice thoroughly and cook it.
  2. Dice the onions & carrots.
Cook
  1. Throw the veggies on the medium-high hot grill with oil. While they begin to cook beat 2 eggs into a mixing bowl.
  2. Give yourself some space and pour the eggs onto the grill. If your grill is on a slant be ready with your spatula! Fold the eggs over and scoot them to the side.
  3. Add the rice to the grill. Chop up the eggs and mix it (along with the veggies) with the rice.
  4. Add garlic butter and mix the rice thoroughly. Add oil as needed.
  5. Let the rice sit for a minute and continue mixing. Add as much soy sauce as desired - you might not need as much as you think though.
  6. You really want to fry that rice - don't take it off too early or it will taste like "mall fried rice." You don't want to burn it either, so keep turning it over to keep an eye on how it's doing.
  7. Serve the rice into bowls, then place them upside down on plates to keep the rice nice and hot until dinner is served!
